The chart below shows the transfer of heat from the boiling water into the milk. The top line shows the boiling water and the lower line the milk.

A milk temperature of 58 degC is attained in approximately 5 minutes, when pasteurising starts. The equalising temperature of 60 degC +/- 2 degC is held for the whole pasteurising period.

The temperature of the water at the end of the period will verify the validity of the pasteurising process. The chart also demonstrates the ability of the system to maintain the required temperature for a far greater period than is actually required.

Recently, particular interest has been shown in the 'SBP' for HIV+ mothers who wish to provide breastmilk for the infant.
The process of heat treatment to attain pasteurisation will deactivate the HIV virus whilst maintaining the nutrients within the milk to give the infant the best opportunity in its development.

The components used in the Pasteurising Kit have been carefully chosen for their thermal properties and any replacement may affect pasteurising performance.
